Similar to Napa Valley or Burgundy for wine, the region where a coffee is grown can tell us a lot about the coffee. One of Peru’s best coffee-producing areas, Cajamarca, is located immediately south of Ecuador in an inter-Andean valley bordering the Amazon rainforest, and produced by small-holding farmers and co-ops from trees of traditional varieties of Arabica. High-grown at 1600-1800 meters, San Ignacio Cajamarca produces one of the best Peruvian coffees: subtly exceptional, light and uplifting with a vanilla-nutty sweetness that deserves appreciation as its own distinctive specialty origin. Our San Ignacio is a full, smooth bodied coffee with rich notes of nuts & cocoa. Aromatic hints of rich chocolate combined with low acidity produce a sweet, mild aftertaste.
